Do you ever crave a really tasty meal but don’t have the time or inclination for a complicated dish?

Do you sometimes find yourself grazing and popping back and forth into your kitchen in the search for something tasty? I definitely do! I may only have time for a quick sandwich, beans on toast or some reheated left-overs… And still, none of these live up the restaurant style gourmet snack I have in mind.

I’ve come up with the speediest of recipes that is delicious, satisfying and full of goodness at the same time. It’s exactly the kind of flavour explosion I crave without having to invest vast amounts of time and energy.

I’m not giving clear quantities here. No measuring necessary, just chop and chuck in the pan to your heart’s content.

You need one pack of instant noodles (minus the strange little seasoning packet). Cook in boiling water, then drain and set aside.

Take a handful of tofu cubes, pat them dry and fry them in a bit of oil on a high temperature. Add 1/2 grated courgette, 1/2 tsp grated ginger (optional), one crushed clove of garlic, frozen peas and red pepper cubes. Stir-fry for a 2-3 minutes. Throw in some seeds (I had pumpkin and sunflower seeds around) and season with a little salt.
Add the noodles and a good drizzle of soya sauce. Ketchap manis (sweet Indonesian Soy Sauce) is great too. Sprinkle with lots of chopped parsley or coriander and enjoy!

Pumpkin seeds are very high in zinc which has many health benefits, e.g. giving a natural boost to your fertility. Adding the seeds also gives a nice bite and crunchy texture which perfectly complements the noodles.
